Recipe: Edamame Salad

This is an excellent recipe for getting a good amount of protein in your diet the plant-based way-and really simple too!


  • 1 cup of edamame
  • 1 cup of diced red bell pepper
  • 1 cup of spiralized zucchini
  • 1 cup of corn
  • 1 tablespoon of chopped red onion
  • Seasonings of choice, tt
  • Balsamic Vinaigrette, tt

Throw your edamame, diced red bell pepper, spiralized zucchini, corn, and chopped red onion into a medium sized bowl. Add seasonings of choice and balsamic vinaigrette into your bowl. Toss until dressing and seasonings are thoroughly dispersed, and serve!
